About Us
Trenchers Farmhouse is a husband-and-wife team: Giacomo & Jennifer Vascotto. After meeting and falling in love in Italy, they spent years in top restaurants
around the globe. Their passion for food developed into a desire to learn about all aspects of what they call “farm to pasta.” They opened our family-
owned and operated farm in 2019 and began creating their handcrafted pastas and sauces, blending sustainable agriculture, Italian traditions and
farm-raised Vermont ingredients.
Practices
Rooted in Italian “al dente” traditions, Trenchers Farmhouse makes their pastas with a signature blend of Vermont-grown, organic wheat. The eggs come from their flock of pasture-raised, heritage-breed hens that have been fed certified organic, soy-free feed. Even though most of the vegetables used in the kitchen are grown on
their farm, they simply can’t grow it all! Trenchers Farmhouse is committed to using organically grown and locally sourced products. For international products, they work with producers who, like them, are part of the Slow Food movement.
