About Us
Just Cut is an enterprise of the Center for an Agricultural Economy based in Hardwick. At the VT Food Venture Center, home of the Farm to Institution Just Cut processed vegetable line, we use our industrial kitchens and semi-automated processing equipment to make a variety of minimally processed vegetable products, designed for institutional food service needs. We make fresh cut, locally grown products, focusing on crops that grow well in Vermont and our region. We work with small and mid-scale farmers and aim to keep the food miles traveled as low as possible for these made-to-order products to get to your kitchens and cafeterias.
